Butternut squash risotto!

My first attempt at and it was delicious! and only 6weight watcher pro points! even better. you will need
step 1 blanch for 3mins so its easier to peel! tip from Miranda, wish I knew before I made it lol
1 large onion,
4 crushed garlic gloves,
1 large butternut squash,
1 tsp of crushed chilli flakes,
3 veg stock cubes,
4 drops of Tabasco sauce!!!! saying this the chilli flakes and Tabasco are optional !
200g of rice your choice
method

peel and chop BNQ WITH GREAT DIFFICULTY!REMOVE SEEDS!
Peel and chop onion, crush the garlic.
place in a pan with a few sprays of the one calorie oil spray,not forgetting chilli flakes!
let it cook for 20mins or until soft,
boil a kettle and crush the 3 stock cubes in to a jug, when kettle is boiled pour in a pint of the water mix well!
time for rice I used long grain rice i washed it first but you can use any rice you like risotto rice is good and so is brown rice!
you will need 50grams of rice per person so thats 200g for the whole dish!
(serves 4) add the rice to the dish and mix well, add 3 quarters of the stock mix well.
now top the jug up with more water from kettle give it a mix, and pour in, now leave to simmer on low for around 20-30 mins depending on how you like yours! add more water if you like it runny. serve with a sprig of coriander!
