Lamb mountain

I'm helping out at a wedding tomorrow. It's for 126 people and they are all having lamb rump. I was asked to prep the lamb. You can only see about half of it in the picture!
Together with 126 fondant potatoes, 10k each of carrots, swede, celeriac and parsnips I can honestly say that I haven't prepped like that for years! It was good fun tho and I'm looking forward to the wedding tomorrow.. Oh and did I say yet that they all have chocolate fondant for desserts? 2 minutes to send 126 desserts will be interesting!!!!
