Argentine cuts

They cut up the cow in different ways in different countries. This poster was on the wall in the butcher's section of La Anómina, my local supermarket , and shows how a cow is divided up in Argentina. Useful if you want to compare with your country, although still not always easy. It's incomplete though, or at least doesn't show where three of the tastiest cuts are located, these being 'asado de tira', 'bife de chorizo' and 'entraña'.
