Sweet chilli glazed salmon with wild rice and veg

I've had flu. Horrible, unable to get out of bed flu. Hence the lack of posts and lack of and lack of any sort of cooking. But now I'm better and back in the kitchen!

My first full meal was this. It had to be light, tasty and full of flavour, and this hot all the buttons. The salmon was marinated in a sweet chilli and lime sauce before being oven baked and served with wild rice and some stir fried veg. Lots of sesame oil, soy sauce, ginger and garlic! It was delicious and just what was needed after a week of plain toast, potato waffles and water.
