I love a good recipe, however when it comes to fish cakes I am unable to follow them! I make my own mix every time and I change what I add constantly!
Tonight's version contained smoked mackeral, mashed potato, tomato ketchup, spring onions and a splash on sweet chilli sauce! Nothing fancy but when fried they were super crispy on the outside thanks to the sugar in the sauces and had a lovely flavour! All served with a mound of steamed mange tout and baby corn tossed in butter and a dollop of sweet chilli sauce! Delightful!
