The roof is on and the kitchen fitters will be there soon. I've been sorting out and writing the courses for next year. It's very exciting. I'm going to deliver a professional cookery course combined with a front of house course and a patisserie course. It'll be a 2 year plan but the students will be very well qualified when they leave. Plus I think it's important that chefs know about front of house and the other way around. On top of this I'm doing a teachers course myself and an assessors course. Busy busy busy!!!
