Fermentation

Man may fancy himself the apex of living beings, yet the tiniest, most insignificant creatures do things he cannot.  I love fermentation!  It goes on all around us and is at least partially responsible for humankind's existence through its ability to both preserve food and make it more nutritionally complete.  It makes bread rise, alcoholic spirits intoxicating, and pickles tangy.  In my case, it's making a batch of "kimchi."  I use the quotation marks because my version would hardly be recognizable to the originators of kimchi, since it's made from asparagus, green beans, brussels sprouts, bok choy, and green onions.  My recipe is great for cleaning out the fridge!
