Welsh

In London we had a gas hob and an electric oven with an electric grill and while we were renovating our home to let it in order to support our lives in Greece we had cheese on toast every day for lunch, cooked under the electric grill. In those days, to the best of my recollection, the mixture on the toast included Cheddar cheese, egg, Worcestershire sauce and finely chopped raw onion.

In Greece we have a gas hob and a gas oven with an electric grill as well as an electric toaster. We are unimpressed by the electric grill in the gas oven so we have not had cheese on toast for almost twelve years. Today was different. Spousie suggested cheese on toast with the camping gas blow torch. YES! Toast cooked by electric toaster, buttered. Finely chopped onion topped with finely grated Regato cheese; blow-torched, followed by finely sliced tomato, salt, pepper, a little more finely grated Regato and a little more blow-torching.

There is nothing quite like comfort-food. We welcomed in Y2K during a monsoon in Borneo in a tin shack & Spousie made French toast in a wok. Today's effort was more cheese-on-toast than it was Welsh Rabbit but it was a delight nevertheless.
