This evening, Indu made this delicious street food delight of tikki chaat that we love to have whenever we are in Delhi.

Thanks to all the different cultural communities that live in Australia, many of the ingredients are now easily available. When we first arrived many years ago, most 'locals' hadn't heard of, let alone tasted the spices and ingredients that go into making Indian food.

Tikki chaat is a dish of potato and lentil cakes that are lightly pan fried, topped with spicy chickpeas, mint and tamarind chutneys, finely diced onions and chopped coriander with yoghurt and freshly ground cumin.

I ate slowly, savouring every mouthful, making it last as long as I could. It was impossible to chat as I concentrated on the burst of flavours from the chaat.
