Steak

1. Take one sirloin steak
2. Marinate steak in Dark Island Reserve with crushed black pepper corns & garlic salt for about 24 hours.
3. Put Steak into very hot pan with a little butter
4. Flip steak so both sides are seared
5. Turn heat down on pan
6. Leave steak in pan until cooked to taste flipping occasionally.
7. Put steak in warm oven, on warm baking tray
8. Pour marinade into pan, add sugar, onions, more Dark Island Reserve, crushed peppercorns and chopped garlic.
9. Stir sauce in pan for a couple minutes until reduced and thickened
10. Add single pouring cream and stir until warm
11. Serve steak on warm plate, pour over cream sauce, with vegetables of choice and a glass of Dark Island Reserve
