Carrot cake with orange cream cheese frosting

You can't really go wrong with carrot cake, can you? That's what I always thought but I have to admit that I wasn't as pleased with this carrot cake as I have been with others. I think the recipe just lacked some punch and the frosting wasn't quite firm enough.

It hasn't stopped my better half from tucking into it heartily, however.

The garnish I used was candied carrot peel. A nice little addition.
