a cyprus colewart...

...by any other name is Brassica oleracea with a range of possible origins from the Mediterranean,  Turkey and Egypt and travelling to Europe via Cyprus (hence the early 16th century moniker in English records.)

Winter veggies are abundant and the dear old 'cauli' is looking very fine on these wintery days.
A creamy flowerhead, the curd, and crispy green leaves just waiting to become a cauliflower cheese dressed with THE BEST cheesy white sauce. This learned in the kitchen of my Yorkshire mother-in-law some 30 years ago.
A family favourite!
