Potsticker dumplings with noodles and gai lan

In the book I'm reading the Chinese mum of the main characters is proud of the potstickers she makes, but I only just learned what potstickers are. They're dumplings cooked in a special way - part fried, water added so that they're part steamed, then fried again - so the bottoms of the dumplings get nice and brown and crispy. We made a trip to the Chinese supermarket and made a great Sichuanese meal when we got back.
