Genius! The inventor of the slow cooker was clearly a genius.

For the aspiring veggie it is nothing short of miraculous. This thai curry is is my third attempt and my favourite so far. As storage is becoming an issue I shall have to ease off. Time to do some eating.... nom nom nom
