From 'McGee on Food & Cooking'; a milk foam on top of coffee prevents a skin from forming and keeps it hot by insulating the liquid below (I hadn't realised it was functional).  The air bubbles are stabilised by protein molecules in the milk, heating it causes more of the proteins to unfold and increases the lifetime of the foam.
