Yes it's another triptych!!   Triangles suggested by AJ and executed in mono for Mono Monday - Contrast With many thanks to Chantler63 for hosting!  

Had a go at substituting Coconut oil in a cake recipe I often use.  I used 3/4 of the weight of butter and 2/3 of the sugar and it turned out fine!  Took more or less the same amount of time to cook too.  Near the end of the cooking time I covered the top in foil to stop it crisping too much too.  

Next I have to try and substitute the milk for coconut or oat milk.  This is all for Grandbaby who is not to have any dairy produce at the moment!
