Maple Syrup Tapping.

My new found family of Canadian cousins kindly gave me a lovely gift of Maple syrup cookies and also a tin of the syrup which will be tasty on pancakes.  The picture is on the box and the extra is the other side and the tin of syrup. Canada produces 71% of the pure and natural maple syrup. Each maple harvest season, the sugar trees are tapped in a slightly different area than the previous year, preserving the health and enforcing sustainable growth of the trees. It is forbidden to cut down an entire maple grove in an agricultural zone. Canada's Amerindian peoples taught the early settlers how to harvest sap   and boil it to make maple syrup. 40 gallons of sap make 1 gallon of syrup. We had some lovely family get-togethers and now the cousins have arrived in Greece to continue their holiday. Such delightful people and I shall miss them.
