What is it about beetroot?

this soup is my favourite this season. Based on the juice of beetroot, carrot and apple, added to some grated veg. and seasonings. It also features my one great discovery this year: coconut yohgurt. That's not coconut flavoured yoghurt, but dairy free yoghurt made from cultured coconut milk - as the label says: heaven in a mouthful.

Coco-yo is pretty much essential for this soup to sing. Actually, coco-yo can make you sing on its own, but I like the chorus of other ingredients.

This soup always tastes warm to me, even though it's been nowhere near the stove.
