Vegan caviar based on chia seeds

Still playing around with ideas for my Xmas class. Here's one for serving up caviar.

There's some chlorella, purple corn powder, garlic and lemon juice in this. It's actually not as punchy as it looks so I might add some dulse to it next time. The coconut yoghurt is splendid (of course) and I was quite pleased with the sharron fruit 'salmon'.

I'm going to do a sushi number on these tomorrow. Oh, and I just found out that papaya seeds are edible. As they resemble caviar eggs, I might have a go with these too. The orange flesh will mimic salmon. Playing in the kitchen makes a great distraction from computer work!
