Border suggestions?

Our new garden is very  small, it does not take Mr P long to mow the strip of grass that used to be part of the field compared with the 1/3 an acre we had in Kent.  We have to maintain a stock proof fence, hence the two rows of barbed wire fence but I am wondering how to make the edge of the lawn more attractive.   Suggestions welcome. I dont want to build a wall, even a nice dry stone wall because it would block out the view of the field and I like watching the sheep.
