At Your Request.......

I was asked to post the recipe for my Cranberry Nut Bread.  It is a New England recipe, that I have had for years.   I have  shared the bread with a lot of people who enjoyed the bread.        Here it is, enjoy........

350 degrees, oven
55-60 mins bake time

Ingredients: 
2 C flour
1 C sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
1/2 salt   (optional, I have done both ways)
1 TBL orange grind     (optional)
1 egg,   well beaten
1/4 C butter (margarine) 
3/4 C Orange Juice 
2 C cranberries,  coarsely chopped
1/2 C nuts, coarsely chopped  ( I like pecans, but you can use walnuts, or         
                                                your pleasure)

Sift flour, sugar, baking powder, baking soda, salt,

Combine  orange juice, rind,  egg,  butter (margarine)

Add to the dry ingredients, mix only until the flour mixture is moistened.

Carefully fold in the cranberries and nuts.    Spoon into 2 greased loaf pans (or 3 small loaf pans)

Test with toothpick.....
cooking time depends on how even your oven is, and how accurate it's temperature.

Cool in pan, then finish cooling on a rack.   Sometimes you may need to run a knife around the edges to unstick.
