It's alive!

My wife noticed a green nodule on the side of a piece of ginger a few days ago and decided to see if it would react to some care and attention.  It did and the result is here.

I've grown to like ginger, particularly when feeling under the weather (ginger-lemon-honey in hot water), but it's probably not warm enough or sunny enough for this to go much further.
