Honesty

is the best policy.  There's an honesty box tearoom in Halton Gill that is much valued by walkers and cyclists.  It's fairly remote and 'always open' so provides a boost even when other cafes are closed.  For some it's become a routine stopping point or even a destination in itself.
It looked like it might close early this year but after an outpouring of support another baker was found and the cakes are as good as ever!  
There's a little book that people express their thanks in - makes a nice read.
