You have a great Bouillabaisse when each separate piece of fish and is cooked to perfection.

The also know you have a good restaurant when the waiting staff and kitchen work in perfect harmony.

I was taken to an unscheduled meeting just after ordering. Everything was kept on hold until I got back.
