Yum!!

Saw this in The Guardian today, offered it up (selected) as a dinner option, had to hunt for the aubergines, nipped to the allotment to pick the mint, added the mash because I’m still working through last year’s spuds, cooked, served up, vanished off the plates. Lamb and aubergine koftas with augergine salsa and yoghurt. And mash. Wow!! Added to the must-do-again pile.
