Navajas . . .

. . . or spoots, as we call/ed them in Orkney! Razorshell fish, done with garlic and olive oil, were quite yum at lunch time today! They were followed by bull's tail, chunked up on the plate. A very Spanish Sunday lunch!

Poppy will know more about this than me, but when I lived in Orkney, I used to watch 'spooters' walk backwards across the flat sands at low tide and catch the spoots as they rose to the surface responding to the pressure of their footsteps. If the spooters had walked facing forward they would not have seen the little critters appear!

I used to cook them in Orkney, first, putting them in a bowl of water so that they would eject the sand from their inner workings which make them less gritty in the eating, once sautéed up!
