Picante de Pollo

This is a typical Bolivian meal with lots if carbohydrates. Picante de pollo is chicken in a very slightly spicy sauce, served with rice, boiled potatoes and freeze-dried potatoes.

Chuño are made by repeatedly freezing the potatoes overnight and trampling them to remove water. In this way they can be preserved for a very long time.

The taste is kind of bland so eating them by themselves isn't very nice. The texture is hard to describe. It's kind of like potato but not as smooth. Served in a big grey lump like this, they don't look very appetizing. But they are pretty good in soup or with meaty stew.
