The first in months

I'm feeling a little bit better today and so I was able to finish making the mini-meatloaves I started a few days ago.  Day One was precooking the eggplant; Day two grating the zucchini; and today I ground up the eggplant, mixed it all together with a mix of ground turkey and ground beef, eggs, panko breadcrumbs, pepper and a salt-free spice blend called Bangkok Blend.  In the end there was enough for eight loaves, though only six could fit in the toaster-oven.  The others await in the fridge.

So I will have some good kidney-diet-appropriate food for several days and I won't be so tempted by contraband.  When I don't have the energy to cook, it's hard to be good.
