Making Praline Chocolates

We had a really fun workshop today with 10 participants and two leaders. The participants all live around here but come from different parts of the world; England (3), Ireland (1), Germany (1) USA (1), Sweden (4). The workshop was led by a couple from The Nederlands.
As the photo shows making chocolates can be a messy business for us amateurs. We have dropped melted and tempered chocolate into the bottom of the mould, then filled the mould with chocolate of another colour, and poured it out again, leaving a coating around the inside of the mould. Here you see what will become dark chocolate and milk chocolate pralines. There is a third mould with white chocolate.
Next we will be adding the filling, and finally a base to seal in the filling. Then we bang the moulds down and the chocolates fall out.
Well, that's the theory...
As I'm writing this I'm eating one of the slightly damaged ones that was reluctant to leave the mould - truly delicious but one, or perhaps two, is sufficient!
