Gluten-free, but not borrelia free...


We have visitors from the UK coming in slightly under two weeks and one of them is gluten intolerant so we are trying to find a recipe for gluten free bread, using buckwheat "grains". This was the first attempt, baked this morning. It is edible, but it isn't much fun! If we try it again salt will be added - the creator of the recipe didn't believe in adding salt. I ate a few slices this evening but have to agree with Jan that it was a bit like "porridge with a crust".  The experimentation will continue but if anyone has a recipe for gluten-free buckwheat bread I'd be happy to see it.
In other news I was outside on yet another soggy misty day. I moved wood into the cellar to dry out and warm up before it comes into the house to be burnt.
On the news today we heard that ticks carrying the borrelia infection (Lyme disease) can now be found throughout Sweden. Previously, infected ticks were only found in the southern part of Sweden but global warming has made the north so tick-friendly that now we can all risk getting Lyme disease.
