what do you do - when you’re forced - to stay-at-home due - to a global pandemic? - cook, of course

so, what’s for dinner? - might be a common mantra - spewing forth from people’s mouths - you can find all sorts of - tutorials on ‘you tube’ these days - with celebrities to ordinary folk - trying to fill up time - there are all sorts - of cookbooks on the market, too - for quick and easy meals - to make with ingredients - you might have on hand - in your pantry - or have easy access to - at the market considering - the restrictions we’ve been facing - or you might catch any of - the numerous food shows - on tv or cable - outlining how to whip up - something to feed your family

i’ve found a number of - food shows on pbs which have - struck my fancy of late - one that included this - pasta dish that sounded - not only quick to make - but different as well as yummy - so i decided to give it a go - true to the directions - it took all of about - 20 minutes to make - was easy and gave me - leftovers for a few days - pasta with tomatoes, mint and pistachios - now that is a dish - that makes it...
