Gluten? Or gluten-free... hmmm, tough choice

Mrs. Ottawacker has, of late, turned her hand to sourdough, with no small encouragement from our friends out in Victoria, BC, who have been skyping on a seemingly hourly basis to follow progress.

The results are in. There are two varieties. Gluten-free and normal. Guess which is which.

The jury was uncertain in its decision. While acknowledging that sourdough should have a certain tartness to it, they were not satisfied that the ubiquitous sourness should be so, erm, sour. The gluten-free was an unmitigated disaster. But maybe that is how it is supposed to taste.

Back to the baking board.
