A time for everything

Thanksgiving!

The last two Thanksgivings we have spent with Jen and Jason, spending a few days ahead of Thanksgiving off hiking with Jen, first year in Nevada, the second around Sedona, Arizona, then spending the four day Thanksgiving weekend with them both at their home in Salt Lake City. This year was a very different Thanksgiving, just the two of us at home. It’s been a trying year, and we miss doing a lot of things we would normally be doing, and we missed going home to England and Europe to see family and to travel. However, we still have so much to be thankful for, a comfortable home to keep us warm and cozy on dreary winter days, food on the table, sound bodies to get us walking outside in God’s creation, beautiful music on the stereo, phone calls and Zoom calls with family, and the promise of better days ahead with encouraging news on vaccines and new leadership in this divided country. Especially thankful for all those who have worked throughout this crisis to keep us all safe and healthy, and provided with necessities - doctors, nurses and all hospital staff, police and emergency services, electrical workers, delivery drivers, grocery workers, postal workers...and the list goes on!
Needless to say, there is plenty of food left to enjoy a second Thanksgiving dinner tomorrow! When there used to be more of us for Thanksgiving, I used to make a Pumpkin pie and a Pecan Pie, usually a Chocolate Pecan pie. This year I asked Roger which he’d prefer, and he opted for Chocolate Pecan. I found a new recipe this year, Chocolate Pecan Bourbon Pie! We had bought some Bourbon when we visited Kentucky probably about six weeks ago now, so I decided to try it - definitely a keeper!
