Realised I am not keeping much of a record, largely because following the diet has settled into some trusted and well tolerated favourites. The magical non yeast bread probably being the best example.

Big learning from last week to note though is that milk is not at all tolerated. Even if cooked, as in waffle mix. Waffles for breakfast led to a half-day wipeout. No idea what the mechanism is here as I don’t think it is lactose intolerance as it is milk with added lactase. Though I wonder if it might be something to do with the lactose impacting the system in a different way. This was further tested when my husband inadvertently bought vegan cookie dough ice-cream which turned out to be much better tolerated than cow’s milk ice cream. Would love to know why but for now it is enough to know about the reaction and be able to adapt accordingly.

And there’s always bread. Thank goodness it is such a quick make and bake.
