Festive baking

Sugar-ish free cookies

90g Butter (unsalted) (softened)
100g Coconut nectar sugar substitute
1 Egg
200g Plain white flour
½ tsp Baking powder
½ tsp Salt

Cream butter & sugar. Best in flour, baking powder and salt. Wrap in cling film and chill dough for an hour. Roll out, cut out Christmas shapes and bake at 180 degrees for 8 minutes.

A snap to please Prue Leith and utterly delicious. They may be iced later if they aren’t all gone by then. Icing will make them less MCAS friendly but a couple may be okay. We have been really cutting down on fructose as well as lactose recently and we think it might be helping. Still hard to say as we had some more disruption in the meds supply but that is all sorted so hopefully we can start to see the results of the diet experiments more. Though we can already see that things are better the stricter on diet we are. Very relieved to live in a time and place with such readily available substitutes.
