Christmas baking

Every year I bake the traditional cookies from my town and give most of them away as gifts.  This year there is not going to be much gift giving since I am not going to the office, but decided to still do some baking and mail it to my friends and family. So I spent all day pretty much baking some shortbread cookies (new this year), pangiallo and tozzetti.  Pangiallo romano goes all the way back to the Roman empire and the recipe changes depending on the town.  Tozzetti are made all around Rome, and everyone makes them slightly different, with the peculiarity of having pepper in it.
