Meatless Monday

Although I'm not a vegetarian, I don't eat much meat, but Meatless Monday lunches at the Food Co-op aren't always appealing to me -- tofu is not my favorite food.

Today's lunch was delicious. I don't remember the myriad ingredients, but visible in the photo are corn fritters, black beans, salsa, noodles, carrots, tomatoes, and cheese. I can't remember what it was called, either.

It was a typically large portion -- Cynthia and I usually share one, but since she's still in Texas, I'll have to finish it myself tomorrow. Shouldn't be too difficult.
