No time for sourdough, but I used a modified version of the Irish recipe to make an overnight poolish and a loaf that has just 1 gram of yeast in it. Yes, we have invited friends for lunch tomorrow. Yesterday we took delivery of half a leg of free-range pork from a local farmer. It is enormous ... nearly six kilos. So S sawed it in half and we have frozen half. Tomorrow's lunch is pork with crackling and all the trimmings! And lots of leftovers.

We won't even be breaking any rules, because to our surprise, the government has not announced a full lockdown. The main change seems to be the closure of shopping centres of more than 20,000 square metres ... and even then the food shops in them (i.e, the large supermarkets that take up most of the space) will remain open. This affects precisely zero shopping centres in the Aude, so will make zero difference to current conditions. I'm sure a lockdown will follow within a week. Meanwhile I just wish they would get their act together over vaccinations. Hopeless.
