Ratatouille and halloumi bake

A wonderfully nutritious meal with onions, peppers, and aubergine (or courgettes) topped with slices of halloumi which is a good source of  important nutrients, including protein and calcium. Halloumi is a semi-hard cheese typically made from milk (from goats). Although it has been enjoyed for hundreds of years in Cyprus, it has recently surged in popularity and can now be bought in most grocery stores. Because it has a high melting point it stays intact when added with the tinned tomatoes 15 minutes before the end of the time in the oven.
