Beetroot falafels!

From one of Michael Moseley’s books, just because we grew beetroot last summer and still have lots in the freezer! I also made some beetroot and apple soup but I’m not sure whether I like that at all.
The weather has been rain/sun/rain/sun and cold all day. I’ve had WhatsApp chats with all my grandchildren but not done a lot else. They are all growing fast now, so it’s lovely to see them online as I can’t be there in person.
