My favourite fish

The John Dory (Zeus faber), or St Peter's fish, is rarely seen at Taylor's Fishmongers on Altrincham Market as most of them seem to go to the restaurants. Despite its uninviting appearance, I think they're absolutely delicious, even though its flesh/weight ratio is amongst the poorest of any fish. For example, this example weighed 710g when bought (it had been gutted), but after I'd prepared it (see extra photo), there was just 280g of flesh.

Just in case you were wondering, I've been to a famous celebrity chef's seafood school in Padstow (there's a clue!) on a number of occasions and it's given me the confidence to prepare (almost) any fish. Highly recommended :-)
