Beef Casserole

With the prospect of an operation coming up (unlikely to be within the next month as there is an ultrasound to be booked and performed and also currently likely to be a period of self-isolation beforehand) I thought that it was time to start converting my freezer full of ingredients into one containing home-cooked ready meals that just need popping in the microwave. Today's addition is a few portions of a beef casserole, slow cooked to get the beef nice and tender.

Plenty of cooking ahead in the next few weeks to get a good variety of meals together.
