Chicken

Spice-seared chicken tenders, quinoa, and cucumber salad. Wine: Lafond Santa Rita Hills Chardonnay 2017.

Everything came out very well. I threw the spice rack at the chicken to good effect (cumin, smoked paprika, tomato powder, anise seed, ground mustard, black lime, chipotle flakes, onion powder, salt, and pepper... that might be everything I used). I didn't neglect to season the sides but kept them simpler (thyme and coriander in the quinoa, and cured sumac in the cucumber salad). The wine was rather an oak bomb, but some green apple also presented itself.
