Burning In

Dear oh dear. I can't think of the right English word for burning-in / tuning / preparing a steel pan for cooking. Oil, potatoes & salt in a new pan basically to burn in a shielding surface. After that no more washing liquid just wipe out with paper towels. That's the theory.

Doing it on the outdoor gas fire. I would like to build out the outdoor cooking area as I really enjoy it. Already have a second gas burner, just need the room and a bit of storage area. There is internal resistance to my plan!
