Pickling...

beets. I put pickled beets in just about everything through out the year so it's always good to get started on the canning. I will do a couple more batches and be set for the year. I love the dark purple color that will stain just about anything. I tried pickling golden beets thinking that because they are so beautiful raw they would look good pickled... nope. They turn sort of a yellowish gray... not very appetizing. So basic red ones for me from now on.
