Pumpkin choc chip muffins

Having made the soup yesterday I decided to make the left over pumpkin into purée to make them . They are paleo which means they are also gluten free. My guineapig Aka Alan said they were very nice. They go gooey after 24 hours which is when I like them.
popped the soup into St. John’s this morning and had a cheeky coffee. My first decent gingerbread latte as it should be made. Neither of the Costa’s in Asford know how to make them properly. On each occasion there has been very little cream and gingerbread man has sunk to the bottom of the glass!
