We used to cook this quite often, way back in the 1980s. In the 1990s we were trying to eat more healthily, and we had to abandon The Dish, because it was loaded with cream, butter and cheese, and crawling with calories. We didn't cook it for decades.
But lately we are cooking The Dish occasionally. That might demonstrate a growing wisdom –"Moderation in all things". Or we might just be thinking, “Oh, what the heck!”
