We found the recipe in Mrs Beeton's tome. Armed with the fact that half a pound is roughly 225 grammes, with adequate almond flour and sugar in equal measures plus three eggs and rice paper to boot, D set to work. Only one further information bite was required. A slow oven appears to be 170 degrees C. The result was marvellous. Thanks Mrs B.

The next stage of this journey will be to revisit the Grand Marnier Soufflé omlette, made possible by our recent acquisition of some Grand Marnier, exotic in these parts. Cointreau, its paler cousin is, in one variety, more easily obtainable but for pedants, like us, inadequate to this high calling. While recalling citrus liqueurs, it would be rude to omit mention of Mandarin Grand Napoleon, which is not available here at any price, in spite of the fact that it is D's favourite.
