Gluten Free Carrot Cake

A very dull day

A quiet day but I decided to try and make a Gluten Free Carrot Cake, using a recipe from the BBC Good Food guide. I had never made one before but I was pleased it turned out so well. I have this theory that if you use the proper ingredients, follow all the instructions then it will be delicious even if it is your first time. Later, when our daughter had a short, between shifts visit, we tried it and it was ……….. yummy! It will keep us going for a few days next week.
