Beetroot

As I noted on Tuesday, this week I have been doing all the cooking as PY is really very busy at work. So, I had to do all the menu planning.  Our weekly delivery of vegetables has been the basis for everything and I decided to use recipes from a book I’d had on the self for a couple of years: a collection one one-pot vegetarian recipes. I am certainly using a lot of veg this week.  Today’s selection used beetroot and celeriac and then backed an egg in the middle of them.  Apart from the fact that we have no grater that is suitable to use to gate root vegetables (so I cheated and chopped them in a blender), everything was very easy aside from trying not to let the eggs break out of their little wells as they were placed in the oven. I had not ideas what to expect but they were delicious.
